An alternative to the traditional Christmas cake. The traditional cake is
heavy on the currants and peel, but I’ve changed it up with the addition of cocoa powder and
some nutty dark chocolate. I wanted to make it easy, so when I discovered some mixed fruit that
had already been pre-soaked in brandy, I knew I was onto a winner. Although a long bake in a
slow oven, it doesn't take too much time to prepare. You can choose to decorate it with
marzipan and fondant icing, or serve it just as it is.
