Why Coffee & Chocolate? 

For decades, chocolate and coffee lovers alike have swooned over the electric effect and delicious flavor of enjoying a piece of chocolate alongside a cup of coffee. Whether it’s a daily ritual or an occasional pick-me-up, this combination is one we were anxious to test out with our new Organic Line.
 
We worked with Pachamama Coffee Cooperative on our Chocolate and Coffee Pairing Guide because they produce certified USDA Organic coffee with delicious flavors that complement the intrinsically rich taste of our chocolate. Our new organic line contains 85% cocoa that is sourced from São Tomé and Príncipe, a tropical island country off the coast of Central Africa. This cocoa has a distinctively different taste compared to our core line of chocolate bars which are made with cocoa sourced from Ghana, West Africa. When we paired thess 85% cocoa chocolate bars with Pachamama coffee blends, we were transported across the globe to the farms we rely on for the highest quality cocoa beans.
 
These pairings are completely vegan, organic, and free from soy, palm oil, artificial flavors and GMO's. We hope you enjoy this delicious selection of chocolate and coffee flavors!

85% Dark Chocolate with Refreshing Lemon + Ethiopia Sidamo Washed

Pachamama Coffee’s washed process Ethiopian coffee from the southern region of Sidamo brings together subtle notes of lemon zest and nectarine for a tangy sweetness that is accented by the lemony finish of our 85% Dark Chocolate with Refreshing Lemon. All notes play against the rich, dark chocolate background to leave you feeling refreshed and indulged.

85% Dark Chocolate with Blueberry & Popped Quinoa + Sidamo Natural

The sensations of our 85% Dark Chocolate with Blueberry & Popped Quinoa are complex, with the delicate sweetness of blueberry being heightened by the palate cleansing crunch of popped quinoa. This mixing of worlds lends itself easily to a pairing with Pachamama’s natural process Ethiopia Sidamo coffee, which was processed to allow the sugars from the coffee cherry to fully consume the bean. This creates a coffee with rich berry notes that blend perfectly with the richness of the chocolate.

85% Dark Chocolate with Turmeric & Ginger + Mexico Chiapas

The combination of turmeric and ginger bring forth an earthy and surprising spice that is tempered by the dark chocolate in this bar; one will have a similar experience when sipping Pachamama’s Mexican coffee from Chiapas. As a washed process coffee, notes of marzipan and caramel add a complex sweetness to complement the herbaceous nature of our 85% Dark Chocolate with Turmeric and Ginger bar. This combination is ideal for sunny afternoons of meditation and reflection for its gentle but awakening effect.

85% Dark Chocolate with Cocoa Nibs + Peru Santa Teresa

Two smooth, simple classics come together for a traditional “mocha” experience. Pachamama’s Peruvian coffee from the Santa Teresa region near Machu Picchu is low-acid, providing an easy sip free of the bright notes one sometimes finds in single origin coffees. Rather, its black cherry and dark chocolate notes are enhanced by the origin flavor of the cocoa nibs in this 85% dark chocolate bar. The crunch of the cocoa nibs fondly satisfies the sweetness of this coffee to create a combo that is sure to satisfy any after-dinner sweet tooth.

Now, we’re excited to begin our working relationship with cocoa farmers in São Tomé who are providing organic cocoa for our line of four 85% Dark Chocolate bars.
 
CECAQ-11 Co-operative is a fairtrade and organic certified farmers co-operative that consists of 1,135 members, 402 of which are women. Our partnership with more farmers further highlights our commitment to the social and economic well-being of cocoa farmers, and we're excited to share this pairing guide to demonstrate how successful a farmer-owned company truly can be in taste and in merit.
