Light and fluffy mini pancakes studded with melting chocolate chips. These pancakes are vegan, gluten-free, healthy and refined sugar-free and come together in a blender. They take 5 minutes to make and work every time! Serve them stacked high with melted chocolate, fruit and syrup.

- 100g oats
- 1 tsp baking powder
- ½ tsp cinnamon
- Pinch of salt
- 1 banana
- 240ml plant-based milk
- 1 tsp lemon juice
- 60g Divine Organic 85% Dark Chocolate with Cocoa Nibs, chopped into chunks
- To serve: melted chocolate, yoghurt, syrup, fruit, extra chocolate
Method
1. Place all of the pancake ingredients expect the chocolate into a food processor or blender and whiz until thick and creamy. Pour into a bowl and leave to rest for 10 minutes. Stir through the chocolate chunks.
2. Heat a large non-stick frying pan with a little oil and drop 1 large tbsp of batter into the hot pan per pancake. Cook over a high heat until bubbles form, about 2 minutes, then flip and cook on the other side for 2 minutes or until golden. Repeat until all the batter has been used.
3. Serve warm with melted chocolate, yoghurt, syrup, some fruit and squares of chocolate.
