Easy Vegan Rocky Road

Rich and chocolatey raw treats that are easy to make with leftover biscuits, marshmallows, rice krispies and dried fruits. Mix it all together with y our favourite chocolate, set in the fridge and slice into decadent bars.

  • 180g Divine Chocolate
  • 1 tbsp coconut oil or vegan margarine
  • 2 tbsp tahini or vegan margarine
  • 80g vegan biscuits
  • 60g marshmallows
  • 50g raisins
  • 15g Rice Krispies

Method

Break up the chocolate into a heat-proof bowl and add the coconut oil and tahini or margarine. Place the bowl over a pan of simmering water and allow to melt.

Break up the biscuits into small pieces and add to a bowl with the marshmallows, raisins and rice krispies.

Pour over the melted chocolate and stir to combine. Pour into a lined tin (about 18x12cm) and press down firmly. Allow to set in the fridge for a couple of hours.

Slice with a sharp knife and enjoy!
