Fairtrade Simple Chocolate Mousse

Simple, delicious and elegant, these chocolate mousses are the perfect dessert to impress guests! This recipe is by Traidcraft, the UK’s largest Fairtrade shop, and is made with Fairtrade coffee and intense 70% Divine Dark Chocolate for a delicious treat that benefits the farmers too.   • 90g Divine 70% Dark Chocolate, chopped
  • 4 free range eggs, separated
  • 2 tbsp of strong Fairtrade instant coffee such as Cafedirect
To serve
  • Whipped cream
  • Fresh raspberries



Place the chocolate and coffee into a heatproof bowl and stand over a pan of simmering water, not letting the bottom of the bowl touch the water, until the chocolate has melted. Stir the chocolate and coffee together thoroughly.


Carefully separate the egg yolks and whites, and beat the egg yolks into the chocolate mixture.


Whisk the egg whites with an electric whisk or stand mixer until they form stiff peaks. Gently fold into the chocolate mixture a third at a time with a metal spoon or spatula being careful not to knock the air out, until no white streaks can be seen.


Spoon into small bowls or pretty glasses and chill in the fridge for at least two hours or overnight.


Serve your mousses topped with softly whipped double cream, Divine dark chocolate shavings and raspberries.
