Pink Himalayan Salt Vanilla Chocolate Balls

The prefect protein-packed pre (or post) workout snack as well as a vegan, gluten-free and delicious one. These date sweetened balls are studded with pink Himalayan salt dark chocolate and coated in more creamy chocolate for an indulgent yet healthy treat.

Ingredients

  • 100g pitted medjool dates
  • 40g almonds
  • 20g almond butter
  • 30g chocolate or vanilla protein powder
  • ½ tsp vanilla extract
  • 2 tbsp date water
  • 20g Divine Pink Himalayan Salt Dark Chocolate, chopped
  • 100g Divine Pink Himalayan Salt Dark Chocolate, melted

Method

Soak the pitted dates in boiling water for 10 minutes and then drain – reserving the water.

Blend the dates in a food processor until sticky then add in the almonds, almond butter, protein powder, vanilla extract and 2 tbsp reserved date water. Blend until sticky and smooth.

Stir in the chopped chocolate and divide into 12 balls. Leave to set in the fridge for 1-2 hours.

Melt the chocolate and coat each ball evenly. Allow to set in the fridge again.
