Raw Chocolate Coconut Energy Bites

We partnered with Claudia and Allan from The World Alternative Vegan Experience (w.a.v.e) who came up with this delicious recipe incorporating our Organic 85% Dark Chocolate with Lemon. (Raw, Vegan, Gluten-Free, Nut-Free)

Ingredients

  • 15 Fresh medjool pitted dates
  • 6 squares Divine Organic 85% Dark Chocolate with Lemon
  • 1½ cups Gluten-free jumbo oats
  • 1 tbsp pumpkin butter
  • 2 tbsp organic coconut butter
  • 2 tbsp vanilla extract
  • ¼ tsp pink Himalayan salt
  • Shredded coconut, to decorate

Method

Soak the dates in warm water for about 10-15 minutes to make them nice and soft.

Break the Divine Chocolate squares into smaller pieces.

Dry the dates and chop them in half.

Put the oats into a food processor with chocolate and salt. Blend for 20-30 seconds.

Add all the other ingredients (except for the shredded coconut) and blend for about 4-5 minutes on and off until a thick and sticky mix is formed.

Scoop the dough out of the blender and place it in the fridge for 40-60 minutes until it becomes a little firmer.

Divide the dough into small pieces and roll them into balls with your hands.

Place the shredded coconut into a cup and roll the balls over it until fully covered.

Store the bites in the fridge and consume within 5-6 days (if they can last that long!)
