Chocolate Covered Rice Crispy Bars

Sticky and sweet rice crispies base topped with rich and indulgent chocolate ganache – these bars are easy to make with simple ingredients and they are a delicious snack or dessert. The chocolate seeps into the rice crispy base meaning there’s chocolate in every part! They are naturally vegan and gluten-free, too.

Ingredients

120g syrup (e.g. golden or maple)
100g almond or peanut butter
1 tsp vanilla essence
1 pinch of salt
100g rice crispies
270g 70% Dark Chocolate
3 tbsp coconut oil
3 tbsp syrup (e.g. golden or maple)
Toppings: cacao nibs, coconut, chopped nuts etc

Method

Step 1

1. Line an 9-inch square tin with parchment paper.2. Over a gentle heat, melt together the 120g syrup, peanut butter and vanilla essence until smooth. 3. Add the rice crispies and the salt to a bowl and pour over the sticky mixture and stir until well combined.4. Press down into the tin and smooth over the top.5. Break up the chocolate and add to a heat-proof with the coconut oil and melt over a pan of simmering water. Remove from the heat and whisk in the 3 tbsp syrup until smooth. Pour over the rice crispy base. Sprinkle over any toppings, if you like. 6. Allow to set in the fridge for 1-2 hours and slice into 16 squares. Allow to rest for 20 minutes before slicing for neater results.
