Incredibly easy, low in sugar and undetectably vegan! Make these for a crowd and you'll wow every guest.
Method
Preheat the oven to 160Fan/180*C and line a tray with baking parchment.
In a food processor, blitz together the oats, spelt flour, salt, cinnamon and baking powder to mix. Pour in the melted coconut oil and pulse until a crumbly mixture forms. Stir in the cacao nibs by hand.
Press 2/3 of the oat mixture into the pan.
Tear the marshmallows apart (or use mini marshmallows) and press into the oat base. Top with the chopped chocolate and sprinkle over the remaining oat mixture. Press everything down lightly.
Bake for 20 minutes until the crumble top is golden and the marshmallows are juicy.
Allow the bars to cool slightly before removing from the tray and slicing.
