Salted Dark Chocolate and Orange Mousse

The classic combination of chocolate and orange is given a Divine makeover in this recipe. A real chocolate lover’s treat, this mousse if sure to satisfy even the most powerful chocolate craving and makes the perfect end to any meal. Rich, boozy and ultimately satisfying and you can always substitute the orange liquor for rum or even juice. Make your pots little or large depending on how piggy you are feeling, either way you are in for a treat!


  • 175g Divine 70% Dark Chocolate in chunks
  • 1 level tbsp caster sugar
  • 3 tbsp water
  • 2-3 tbsp triple sec/ Grand Marnier
  • 40g slightly salted soft butter
  • 3 large eggs, separated
  • a small pinch of crunchy salt, plus a little extra for topping
  • Grated orange zest for topping



Sit a heatproof bowl over a pan of barely simmering water.


Add chocolate, sugar, water. Combine and leave to melt slowly. Remove the bowl. Stir in the butter, booze, egg yolks. Set to one side.


Whisk the egg whites until stiff. Beat one tbsp of the whites into the chocolate mix along with the pinch of salt. Fold the rest of the whites lightly into the chocolate with a metal spoon. Don’t over mix to keep it light and fluffy!


Spoon or pour into your container of choice. Chill for 1-2 hours and then top with orange zest and a little more crunchy salt.
